I would replace Condemned 2, Soul Calibur and Midnight Club with Lost Odyssey, Braid, Prince of Persia.
I love Fable 2 just like I love Fable 1. 50+ hours and could easily spend more.
For me, Fallout 3 is Oblivion with guns. And I hate Oblivion.

Played this game on my PC and I think it's not my cup of tea.
Didn't like combat system, inventory system, etc.

I'm currently on disc 3 in LO. I wouldn't say the loading time is that bad or there are any problems with loading the textures.
Oh, and btw, the game is great.
I think problems with 360 could come up only in case of poor optimisation. You said it yourself - the graphics are dated.
how can you make a scored review if you haven't seen most part of the game yet. I mean level up to 80, visit all dungeons (normal + heroic), finish the most part of all new quests, clear some 25ppl raid instances.
Horde mode is really fun, especially on hardcore+ difficulty.
It kept me and my friends concentrated as hell till the last wave :)
